Brunch | Baked Eggs


I made these baked eggs the other day and they were so tasty that I thought that I would share the recipe. They can be made for breakfast, brunch or any other meal for that matter! They are really easy to make and look really effective so read on to find out how to make them...


You Will Need
Serves 2

2 Large Baking Potatoes
4 Medium Eggs
4 Rashers of Bacon
Milk
Salt & Pepper
Fresh Herbs

To Make

1) Bake the potatoes in the oven for 20-30 minutes 
2) Remove the potatoes in the oven, cut in half and scoop out the middle
3) In a separate bowl, mash the potato middles with a splash of milk and season with some salt and pepper
4) Re-fill the middles of the potatoes, leaving a well in the middle
5) Crack the eggs into the wells and bake at 160 for 8-10 minutes or until the egg white is set and the yolk runny
6) Grill the bacon and shred over the top of the eggs, garnishing with some fresh herbs
