Weekend Baking | Apple Pie with Cinnamon Pastry


I love eating apple pies and now that autumn is upon us, apples are plentiful and taste so good! I wanted to change up the recipe a bit so I decided to make cinnamon shortcrust pastry instead of the normal plain shortcrust. It's so easy to do and doesn't have to be exact, just use what you have. Read on to check out the recipe...


You Will Need

For The Pastry
100g of Unsalted Butter
220g of Plain Flour
2tsps of Ground Cinnamon
A pinch of Salt
A splash of water

For the Filling
4 Medium Apples
50g of Butter
2tbsps of Plain Flour
1 mug of sugar
1/2 a mug of water
1tbsp of Ground Cinnamon
1tbsp of Ground Ginger

To Make

1) For the pastry, rub the unsalted butter and flour together until it resembles breadcrumbs
2) Stir in the cinnamon and salt and add some water until the mixture binds together. Cover and keep in the fridge.
3) Chop the apples into chunks and then set aside
4) In a saucepan, melt the butter and stir in the flour until it makes a paste
5) Add the sugar, water and spices and simmer for around 5 minutes
6) Pour in the apples and cook for around a minute
7) Line a pie dish with the pastry and keep around 1/3 aside
8) Transfer the filling into the pie dish and arrange the leftover pastry in a lattice design
8) Bake for around 45-55 minutes at 180
9) Eat straightaway or leave to cool
