What I Eat In A Day | July

It's been a really hot couple of weeks and so I've switched up a lot of my daytime meals as I never want to eat heavy things when the weather is warmer. I've also tried some new recipes and included some more fruit and vegetables too, read on to check out what I ate yesterday...

Breakfast - 3 Ingredient Pancakes

These are my new favourite discovery! They're healthy, filling and taste amazing. The three base ingredients are mashed banana, egg and oats then you can add optional flavourings and fruit too. I added cinnamon and raspberries to mine.


Lunch - Spicy Prawns with Courgetti and Noodles 

I love making spicy prawns but I usually eat them with pasta. I didn't want something that heavy for lunch so instead I cooked some courgetti and wholewheat noodles to mix in. I served it with some baby tomatoes and extra chilli.

Dinner - Vegetarian Bolognese

I'm a really big fan of quorn mince as I don't think that you can taste the difference at all! I love having lots of vegetables with this type of meal too.

After Dinner Snack - Apple Tart
I had done a little bit of baking in the afternoon so I couldn't pass up trying one of the fruit tarts I had made! This apple one has a caramel sauce underneath the apple and is one of my favourite treats!

  1. This all looks so yummy - I've made pancakes with mashed banana and eggs before, but I'm definitely going to add oats next time I make them! And the prawns sound so yummy!

  16. Hi Rosanna, all of your meal ideas look so healthy and tasty and I love the idea of switching out pasta with courgetti and wholewheat noodles! I am definitely going to try that in the future :) Also, I have never heard of quorn mince before - I will try to see if I can get that at my supermarket <3 It sounds like a healthier option to normal mince :) Have a great day! xx
