Weekend Baking | Banana Muffins


I'm not a huge fan of bananas but I do love them in a cake! This is a great recipe if you've got any ripe or left over bananas that need using up, read on to check out the recipe...


Ingredients
Makes 20
200g of Mashed Bananas
250g of Granulated Sugar
250g of Self-Raising Flour
150g of Melted Unsalted Butter
2 Eggs
1tsp of Mixed Spice
20 Dried Banana Chips

Method
1) Combine eggs and sugar in a large mixing bowl
2) Add the banana, sugar, flour and spice and mix for around 2-4 minutes
3) Finally add the melted butter and transfer into muffin cases
4) Place a dried banana chip onto the top of each muffin
5) Bake at 180 for 25 minutes or until golden brown
6) Serve and enjoy!
