What I Eat In A Day | Part 2

I did a What I Eat In A Day blog post a few months back and really enjoyed writing it and loved reading all the comments so I thought I would do another one. I'm trying to eat well at the moment and find that it's easier to do when the weather is warm so fingers crossed for some more sunshine! Read on to find out what I eat in a day...

Breakfast
Porridge with banana and seeds

I've been eating this a lot in different variations over the past few weeks, I also like to eat it with berries and if I need some extra energy then peanut butter too. I find that it fills me up much more than cereal or toast and gives me lasting energy throughout the morning.

Lunch
Roasted peppers with bulgar wheat, red quinoa and pomegranate

I buy the bulgar wheat, red quinoa and cracked soya from the supermarket and it only takes ten minutes to cook. It's such a great alternative to rice or pasta and pairing it with the roasted peppers and pomegranate makes it tasty and healthy

Dinner
Ricotta fritters with olive tomato sauce and grated courgette and chilli salad

I had been planning on making this for quite a while since I saw it on Jamie Oliver's 15 Minute Meals. I was convinced that it would take me much longer than 15 minutes to cook but it was so simple to make and tasted delicious!

Evening Snack
Berry Crumble Traybake

I put the recipe up for these a couple of weeks ago (check it out here) and they are the perfect sweet treat if you need a sugar fix! I'm definitely going to make these again and try out some different flavour combinations.
