Weekend Baking | Red Velvet Baked Cheesecake Brownies


Sometimes we all need a treat and last weekend I wasn't feeling too good and wanted a chocolate fix. I hadn't made anything like this before but I knew that they would taste good! I combined two recipes together to make a perfect combination, read on to check out how I made them...

Ingredients

For the brownie:
2 Eggs
200g of Caster Sugar
130g of Dark Chocolate
120g of Unsalted Butter
100g Of Plain Flour
1tsp of Red Gel Food Colouring

For the Cheesecake topping:
1 Egg
180g of Cream Cheese
50g of Caster Sugar


Method

1) Melt the chocolate and butter together and add sugar, the flour, then eggs
2) Mix the red gel food colouring with 2 tablespoons of water then add to the mixture
3) Pour the mixture into a medium sized cake tin, keeping about three spoonfuls of the mixture aside
4) Make the cheesecake topping by mixing together the egg, cream cheese and sugar until combined and fairly thick
5) Pour the cheesecake topping over the brownie mixture
6) Spoon bits of the leftover mixture on top and swirl into the cheesecake topping with a cocktail stick
7) Bake at 180 for 30 minutes 
8) Serve and enjoy!
