Recipe Ideas With British Lion Eggs

Hi everyone, hope you are all having a great week so far! I always struggle for new meal ideas and I know that many people get stuck in a rut with the same lunches and dinners they make so when British Lion Eggs asked me to come up with some recipe ideas, I jumped at the chance. I've done one savoury and one sweet (I couldn't resist a bit of baking!)

Eggs are such great source of high quality protein, full of vitamins and nutrients and also, an extremely versatile ingredient. I always try to incorporate eggs into my food when I can and British Lion Eggs have a whole host of great recipes on their website, including omelette recipes and baking ideas if you need a sweet treat! Bubble & Squeak With A Poached Egg




Ingredients
Serves 3
3 Eggs
4 Medium Sized Potatoes
2 Diced Leeks
1 Cooked Carrot 
2 Diced Shallots
 10 Cooked Leaves of Cabbage
150g of Diced Pancetta 
4tbsp of Plain Flour
Salad to serve

Method
1) Cook and mash potatoes (this recipe is also great to do if you have leftover mash as it cuts out this step!)
2) In a frying pan, fry the pancetta until cooked and add the leek and the shallots and leave for around 5 minutes
3) When cooked, combine potatoes, leek mixture, cabbage and carrots in a large bowl and shape into patties, this mixture should make 6-8 medium sized ones
6) Dust the patties with a little plain flour and fry in oil until golden brown
7) Whilst the bubble and squeak patties are cooking, poach the eggs for 3 minutes in simmering water
8) Serve and enjoy!

Lemon Cupcakes






Ingredients
Makes 12
For the Cake
2 Medium Sized Eggs
110g of Self-Raising Flour
100g of Butter
100g of Sugar
Juice of 1 Lemon
For the Icing
75g of Icing Sugar
Juice of 1 Lemon
Candied Lemon Slices (To decorate)

Method
1) Combine all cake ingredients and whisk until a smooth batter forms
2) Transfer the mixture into cupcake cases and bake at 180° for 15 minutes or until light golden brown. Leave to cool
3) Whilst cakes are cooling, combine the icing sugar and lemon juice together to form a relatively thick icing
4) When cakes are cold to touch, pour icing on top and decorate with a candied lemon slice
5) Eat, repeat!

    1. They just have a poached egg on top but you can also add an egg into the mixture too, it will help them bind together :)
