Christmas Chai Muffins


Today I wanted to share my recipe for Christmas Chai Muffins. I was inspired by a Nigella recipe which you can check out here. I made these yesterday and they turned out really well, I used chai latte powder instead of loose chai tea as I found the taste nicer and I made icing to go on top as well (It is the month of indulgence after all!). Read on to find out how I made them...

Ingredients
Makes 6
For The Muffins
100g of Self Raising Flour
30g of Dark Brown Sugar
30f of Caster Sugar
1 Egg
110ml of Almond Milk
1tbsp of Chai Latte Powder
1tsp of Cinnamon Powder
75ml of Sunflower Oil

For The Icing
1tbsp of Mixed Spice
3tbsp of Icing Sugar
1tbsp of Water
Chopped Almonds


Method

1) Combine flour and sugar in a bowl and set aside
2) Heat the almond milk with the chai and cinnamon powder and cool for five minutes
3) Add the egg and oil to the milk and whisk until combined
4) Mix the wet and dry ingredients together and spoon into muffin cases
5) Bake on 180 for 25 minutes or until golden brown and then leave to cool
6) Mix the spice, icing sugar and water together in a bowl and drizzle on top of the muffins and scatter the chopped almonds over the icing
7) Serve and enjoy!

  17. lovely recipe! these muffings seem yummy. Last time I was baking, I had a little cooking accident, so I ended up making my cake only from cream (made from cheese and cream) and kiwi...I put it in the fringe, expecting nothing....and strangely enough this "cake" tasted pretty good.

    Did you know the origin of the word 'Chai' is from Hindi that we speak in India. Plus, I honestly have no clue why everybody calls it Chai tea, 'coz it means the same. Chai when translated to English means Tea, so it wouldn't make sense to call Tea Tea now.. Would it? I asked the same question to a few Barista's in New York last time I visited? The owner then changed the name of the Tea to just Indian Chai or Masala Chai in the menu.

    The spiced Tea is called the Masala Chai or herb Chai again. So I get really confused when people name the tea a 'Chai Tea'. I'm glad you named the muffin as just 'Chai Muffin' and not 'Chai Tea Muffin'.
