Apple & Cranberry Christmas Chutney


Hi everyone, I can't believe that I'm already talking about Christmas! However, in this case I do have a good reason. Last month I had run out of recipes I could make with apples and with still bags of them left in the house I decided that I would give chutney a go. There are so many apple chutney recipes around now but as I'm not the biggest fan of raisins or currants, it rather narrowed it down. I found a great spiced apple and cranberry chutney recipe on the food network and decided to tweak it a little to suit me better. Check out what I did below...

Recipe
Makes 2 jars

800g Diced and Peeled Green Apples
200g of Dried Cranberries
4 Diced Shallots 
175ml of Cider Vinegar
175ml of Water
150g of Caster Sugar
50g of Brown Sugar
1tsp Ground Ginger
1tsp of Mixed Spice
1tsp of Salt


Method

1) Place all prepared ingredients in a large saucepan and cook for 40-50 minutes until condensed and thick.
2) Add to sterilized jars and seal. 
3) Store in a dark and cool place for a few months before eating.
